1 & ½ hour session exploring Davids unique method of smoking salmon. Learn about the salmon farming in Shetland, how he prepares the fillets for smoking and produces his own sawdust for the smokers.
During the presentation he’ll touch on the science of taste, smell and flavour. Your guests will sample the salmon and discuss the various flavours and textures.
