What’s new in Scottish food and drink – Summer 2025

Scottish food and drink is something your clients will be really excited about when they visit Scotland! And rightly so – Scotland has a lot of exciting things on the menu in 2025.

This summer we have new distilleries and perfect pubs to share with you. We hope you’ll like these new developments across the country.


Eden Mill

Location: Fife

Embodying the ‘Spirit of St Andrews’, Eden Mill is a Scottish distillery producing whisky and gin in the Kingdom of Fife.

What’s new?
A new visitor centre, including a fabulous sky bar is due to open at Eden Mill in late August 2025. The distillery will offer gin and whisky tours, and the sky bar will serve up cocktails and stunning views, as well as local food from the café. Eden Mill’s focus on sustainability is clear. All electricity will be 100% renewable and the CO₂ produced during the fermentation process will be captured for future use. The distillery is now accepting requests for group bookings and bespoke experiences.

Gael & Grain

Location: Glasgow

Gael & Grain is a charming Scottish pub & kitchen located in Glasgow’s vibrant West End.

What’s new?

Located near Kelvingrove, Gael & Grain has been newly rebranded by Lomond Leisure Group for 2025, with a fresh look and feel. This pub & dining venue blends traditional homecooked favourites with playful twists. Signature dishes include the standout Haggis Tikka Masala and the unforgettable Irn Bru Cheesecake. With 65 covers in the main pub and a 30-seat private dining room, it’s perfect for everyday dining as well as larger groups.

Kirk O’ The Lochs

Laggan Bay Distillery

Opening in 2025, Laggan Bay Distillery will become the 12th whisky distillery on the iconic island of Islay.

This new distillery is a partnership between Ian Macleod Distillers and The Islay Boys, whose newly completed brewery sits next to the distillery at Glenegedale, close to Islay’s stunning Laggan Bay. Inspired by the landscape of Laggan Bay, an area of outstanding natural beauty, the distillery has sustainability at the heart of its journey. This includes dedicated wetlands to manage liquid waste and provide a haven for wildlife. The perfect place for your clients to experience the modern face of Scotch whisky production.

Lerwick Distillery

Location: Shetland

Billed as the world’s most northerly Scotch whisky distillery, Lerwick Distillery is currently being assembled and is due to go operational later in 2025.

What’s new?

Shetland is set to welcome its first whisky distillery this year with the opening of The Lerwick Distillery, after a £4m investment. While the distillery is being assembled, the doors will open to offer a rare opportunity to see how it’s all coming together and savour some of Lerwick Distillery’s inaugural releases, each expertly crafted by legendary Master Distiller, Ian Millar. Two whisky experiences are currently available – a 30 min and a 90 min duration.
